SIT30821 Certificate III in Commercial Cookery

Formal recognition for cooks who use well-developed cookery skills and sound kitchen knowledge to prepare food across restaurants, hotels, clubs, pubs, cafes and coffee shops.
Overview

Turn years of hands-on kitchen work into the SIT30821 Certificate III in Commercial Cookery, a nationally recognised qualification for cooks who prepare a wide range of dishes using well-developed cookery skills and sound knowledge of kitchen operations. Recognition of Prior Learning (RPL) allows your experience preparing food in a working kitchen to be formally assessed against this qualification rather than starting your learning over. Once your evidence is assessed and confirmed by our partner RTO, you hold the same AQF-recognised Certificate III as anyone who completed the qualification through classroom-based study, supporting recognition as a trade cook.

Frequently Asked Questions

Can I get a Certificate III in Commercial Cookery through RPL if I've been cooking in kitchens for years?
Yes, RPL lets a partner RTO assess your existing cookery skills and kitchen experience against the SIT30821 units instead of you doing the full commercial cookery course from the beginning. ATSR helps you gather the right evidence, and the RTO carries out the formal assessment and issues the qualification.
What kind of evidence do I need from my cooking experience for RPL?
You need real evidence of dishes you've actually prepared on the job, such as photos or records of appetisers, salads, stocks, sauces and soups you've made, and dishes covering vegetable, fruit, egg and vegetarian cookery. The evidence needs to show the range of cookery methods you use, not just one type of dish.
Is a Certificate III in Commercial Cookery from RPL the same as one from a TAFE apprenticeship?
Yes, it's the identical AQF-registered qualification, issued by an ASQA-registered RTO whichever pathway you take. RPL simply recognises the cookery skills you've already built through work, rather than teaching them to you again.
Does a Certificate III in Commercial Cookery let me work as a qualified cook?
SIT30821 is the qualification cooks use to show they can prepare a full range of dishes in restaurants, hotels, clubs, pubs, cafes and coffee shops. It's the trade-recognised entry qualification for the cook role across the hospitality industry.
